There are so many different courgette muffin recipes readily available, mostly containing a lot of sugar and fats. Which to us in moderation they're ok! but I wanted to create a "healthier" alternative which taste just as indulgent and still has the sticky texture we just love from a chocolate cake. I hope you'll not be disappointed!! (makes 12 muffins)
Serves: 12
  • 30g cocoa powder (the best quality you can find)
  • 100g caster sugars
  • 80ml oil of your choice
  • 180g self raising flour
  • 1 egg
  • 200g grated courgette (approx 1 average sized courgette)
  • 1 tsp vanilla extract
  • 100ml milk
  1. Simply mix all the ingredients in a large bowl until thoroughly combined and then scoop into muffin cases, or a lined cake tin if you prefer.
  2. Cook at 180oc for 20 mins, approx 30 mins for a large cake.
