So we've had a busy few days spent finalising my new career as a full time Mama, I feel very lucky and fortunate to not miss a single meal time with Penny 😊 here's to the next chapter in our lives 😊

Ingredients
- 250g ricotta
- 1 egg
- 3 tbsp plain flour
- Zest of half a lemon
- 1 roasted red pepper cut up finely
- A little cracked black pepper
Instructions
- Mix all ingredients together
- Then lightly fry in a non stick pan until golden, turn over very carefully.
- We served these simply with a red sauce;
- carton of chopped tomatoes
- clove of finely chopped garlic
- Black pepper
- Fresh basil
