Pea and Mint Fritters
A lovely busy day visiting Penny's great Nanny in Grimsby, we couldn't resist a chippy lunch with family whilst out and about, the fish there is the best! Penny came prepared with a box of smoked mackerel, avocado, tomatoes and bread sticks. Due to this Mr PLW and I haven't eaten yet as we're still full on fish and chips! These little fritters were whipped up super quick for Penny (although Mr PLW did sneak a few, just so she didn't eat alone ;)) Eat, Freeze or refrigerated leftovers for up to 3 days.

Ingredients
- 200g peas
- 100g wholemeal self raising flour
- 1 egg
- ½ tsp baking powder
- Handful of chopped mint and parsley
- A splash of milk
Instructions
- Blend half the peas with the rest of the ingredients
- Add a splash of milk so the mixture is a thick runny batter
- Add the other half so they stay whole.
- Heat a pan with oil, we used coconut and then dollop the mixture in using a tablespoon.
- Lightly fry for 3 minutes on either side until golden, rest on kitchen towel to cool.
