Butternut Squash and Chickpea Burgers

Ingredients
- ½ a diced, then roasted butternut squash (40 mins at 180)
- 1 tbsp garam masala
- 1 tbsp ground cumin
- 1 finely chopped garlic clove
- a handful of fresh coriander, chopped,
- 1 tin of chickpeas
- a handful of garden peas
- 50g fine breadcrumbs
- 1 egg
Instructions
- in a bowl combine the squash, chickpeas and peas - mash slightly with a potato masher or the back of a spoon
- add the herbs and garlic
- mix in half your breadcrumbs ( you may need more if the mixture is quite wet)
- pop in the fridge to firm for an hour
- shape into patties
- dip the burgers in beaten egg then sprinkle with breadcrumbs
- put onto a baking tray and cook for 35-40 minutes at 180 until golden.
- Alternatively, shallow fry until golden in both sides.
