Lentils have excellent nutritional values so it's worth sneaking them in whenever you get the opportunity. I'm especially keeping on top of my intake now that I'm into the third trimester.

Ingredients
- 3 carrots, chopped and roasted in the oven for around 45 mins until really soft.
- 1 chopped onion
- 1 stick of celery
- 1 clove of garlic
- a handful of red lentils
- season to taste
Instructions
- In a large pan lightly fry the onion, celery and garlic until soft (around 5 mins)
- add the lentils and cover with water.
- simmer for 20-30 mins until lentils have cooked.
- Add the carrots, blend and then season.
- Just add a little more water or milk if it's too thick.
- Garnish with a little fresh thyme, serve with bread and butter
