Super simple baby friendly rice pudding, lovely on its own or with a seasonal topping; blackberry compote, stewed apple etc. We had hoped for some baked damsons with ours, unfortunately they are far too high up the tree!

Ingredients
- 35g short grain rice
- 185g coconut milk
- Vanilla extract
Instructions
- Heat oven at 150 degrees
- Put rice into a greased oven proof dish, then add the small can of coconut milk, fill the can with water and add to the rice. Add a drop of vanilla extract and mix.
- Finish with grated nutmeg.
- Cook for 90 mins, stirring every 30 mins.
- This recipe won't form a skin like some rice puddings do.
- Buying pudding rice is totally unnecessary.
