This morning we've been hard at work testing a definite contender for Penny's Birthday cake, I must admit I love cake, any cake! But carrot cake is my all time favourite and as Mr PLW isn't part of the carrot cake fan club it's not very often I make it. Here's our recipe, which is sugar free, delicious and most importantly Penny approved! We'll be topping it with cream cheese mixed with fresh orange zest 👌 Makes 4 muffins - double the quantity for a big cake. .

Ingredients
- 125g self raising flour
- 1 egg
- 60ml coconut oil or olive oil
- 3 tbsp milk
- 1 large grated carrot
- 1 tbsp mixed spice
- ½ tsp bicarbonate of soda
- 30g raisins
Instructions
- Mix everything together and bake at 180°c for 30 mins. Test with a skewer, if it comes out clean they're ready!
- For the topping simply mix cream cheese with as much fresh orange zest as you like
