Tuna and Sweetcorn Croquettes

Just to make life a little easier I've prepared a few more nibbles to keep Penny happy this weekend. Cooking in a camper always takes ten times longer so I've made sure we are well stocked up on snacks to grab. These are also great for picnics and packed lunches. I substituted the breadcrumbs for stuffing mix as I didn't have any in the cupboard.

Ingredients
- 1 peeled and steamed sweet potato
- ½ a tin of tuna
- 1 tbsp sweetcorn
- A small handful of breadcrumbs or stuffing mix
Instructions
- Mash the sweet potato.
- Then add the tuna, sweetcorn and breadcrumbs to bind the mixture together (you may need more breadcrumbs depending upon the size of your sweet potato)
- Form into croquettes, balls or discs then pop onto a lined baking tray.
- Cook at 180oc for 15-20 mins until golden.
- Eat warm or keep in an air tight container in the fridge for up to 3 days. Makes approx 8 croquettes
