Ingredients
- 225g plain flour
- ½ tsp salt
- 25g soft butter
- 7g sachet fast action dried yeast
- 55g dried mixed fruit
- Zest 1 orange
- 1 tsp mixed spice
- 150ml semi skimmed milk
- For the crosses:
- 25g butter
- 55g plain flour
- 4 tbsps water
- For the glaze:
- Apricot jam (optional)
Instructions
- Sieve the flour and salt into a mixing bowl and rub in the butter until mixture resembles fine breadcrumbs. Stir in the yeast, spice and orange zest.
- Warm the milk to 37C or lukewarm, tip the mixed fruit in and then pour into the flour mixture and mix to a soft dough.
- Turn out on to a floured surface and knead dough until elastic and no longer sticky. Either form your mixture into little balls or pop into a loaf tin to slice.
- Cover with lightly oiled clingfilm and leave in a warm place until the dough has doubled in size (around half an hour)
- To make the crosses, blend the butter with the flour and four tablespoons of water. Gently remove the clingfilm from the buns and pipe the mixture into a cross on top of each.
- Bake in a preheated oven at 210C, 190C fan, gas mark 7 for about 15 minutes until golden brown.
- To make the glaze, gently warm the apricot jam. Brush over the hot buns, return to the oven and cook for a further two minutes.
