Ingredients
- 25g melted butter
- 70g polenta
- 70g plain flour
- 1 tsp baking powder
- 140ml milk
- 20g grated cheese
- 1 egg
- 2 tbsps sweetcorn
Instructions
- In a bowl add the polenta, flour and baking powder, mix well.
- Break the egg into a jug and whisk together with the milk.
- Combine both the wet and dry mix and then add the butter, sweetcorn and cheese.
- Pour mixture into muffin cases and bake at 200c for 25-30 mins, insert a skewer and if it comes out clean they are done.
