Happy Monday morning peeps! I actually couldn't wait to bake something this morning so whilst Penny had a nap I whipped these up. I started by sticking my jar of Lucy Bee coconut oil in the oven to get every last drop out (2 tbsp's)

Ingredients
- 2 tbsp's coconut oil
- 3 handfuls of oats
- 1 handful desiccated coconut
- 1 egg
Instructions
- Add 2 tbsp's melted coconut oil or melted unsalted butter to 3 handfuls of rolled oats, 1 handful of desiccated coconut and 1 egg.
- Place 1 tbsp size portions onto a lined tray and then flatten.
- Cook at 180°c for 12-15 until golden around the edges.
