Cheese and Tomato Slice
Sometimes it's all about the simple things in life, cheese and tomato is one of those things. 😍 These little slices are great served warm or cold and they're fantastic for an easy to grab on the go bite. Suitable to freeze or store in the fridge for up to 3 days.

Ingredients
- 4 eggs
- A handful of grated cheese
- 1 sliced onion
- 2 tomatoes
- Fresh thyme
Instructions
- Sweat the onion in a little oil and butter until soft.
- Break the eggs into a bowl then add ⅔ of the cheese and a few sprigs of thyme leaves.
- Add the onions to the mix
- In a lined brownie or loaf tin add the mixture
- Sprinkle on the rest of the cheese
- Lay the tomatoes over the top
- Cook at 180°c for 20 mins until golden.
