Carrot and Cheese Biscuits

We've re-stocked the snack tin with this sunshine in a biscuit creation, a different take on our savoury flapjack recipe... I sampled one at lunch with my carrot soup and Penny had hers as a snack after baby group, we both loved them.

Ingredients
- 1 finely grated carrot (around 100g)
- 1 egg
- 30g finely grated cheese
- 2 tbsp oatmeal
- Poppy seeds
- Add a little water if the mix is too dry.
Instructions
- Pop dollops onto a lined tin and flatten with the back of a spoon, or cut them out with a cookie cutter.
- Sprinkle with Poppy seeds.
- Bake at 180°c for 10-15 mins depending on the thickness of your biscuit, they should be golden and crisp around the edges.

How long do these cheese biscuits last? Can you freeze them?
Hi, they should last 2-3 days in an airtight container. They will freeze well and should be defrosted overnight before eating.
