Blueberry and Vanilla Muffins
As it's Penny's Birthday tomorrow we are treating her baby group chums to a few nibbles this afternoon. Penny loves blueberries, so it's a great excuse to take the mess elsewhere 😂😉😙

Ingredients
- 200g plain flour
- 2 tsp baking powder
- 70g coconut oil (melted)
- 2 eggs
- 200ml milk
- A splash of vinegar
- 1 tsp vanilla extract
- A handful of blueberries, frozen or fresh
Instructions
- Put all dry ingredients into a bowl.
- In a jug add vinegar to the milk, then mix in the eggs and vanilla.
- Add the wet ingredients to the dry followed by the blueberries.
- Mix and then pop into cases.
- Cook at 180°c for 30 mins
- Makes 6 large muffins
