I can't help but feel a little sad that our beetroot glut has come to an end and our veg plot is looking a little sparse. We have been so lucky with an abundant crop this season, but we look forward to planning ahead for next year. Beetroot Crisps:

Ingredients
- 2 small or 1 large beetroot
- 1tsp coconut oil
- A sprig of rosemary
Instructions
- Use a mandolin (if you dare) or a sharp knife, cut the beetroot into thin circles.
- Line a baking tray and spoon on the coconut oil, put into oven at 200 degrees.
- Coat beetroot in oil on the tray and bake for 15-20 mins until crisp.
- Add rosemary a few minutes before they are ready to come out.
- Chill then serve.
- A fun texture for little ones that is healthy, quick and easy!
