Yay we have a baby friendly cake! I have a feeling this weekend is going to be great. I've actually been waiting all week for my bananas to blacken, they were still yellow last night and I just couldn't wait any longer. Still tastes amazing... So today's moto is...don't worry if your bananas aren't over ripe. 😜 HAPPY FRIDAY EVERYONE (Oh and we've nearly reached 500 likes, thank you all so very much!!!💛💛💛)

Ingredients
- 2 bananas mashed
- 70ml oil, coconut, olive or rapeseed
- 2 eggs
- 50ml milk (or water)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 2 tsp mixed spice
- 120g wholemeal self raising flour
- 80g white self raising flour
Instructions
- Mix together all ingredients
- Pour into a lined loaf tin
- Nuts, seeds, choc chips, dried fruit optional.
- We added a handful of raisins for Penny to enjoy picking out 😅
- Bake at 170 in a lined loaf tin for around 1 hour.

Hi Hannah, just found your website. I love it some great recipes I am going to make over the weekend. Would like to know if this can be frozen? Would like to see on your other recipes if they can be frozen as I like to batch cook for my 16 month old. Thanks Nicola – ireland
Hi Nicola.
Sorry for not replying sooner. This recipe, like the majority of my recipes, can be frozen. I would suggest slicing the loaf first as you can then take out slices as you need them.
