Banana and Avocado Muffins

Yummy muffins using two of Penny's current favourite foods; banana and avocado. Great for on the move, breakfast, lunch or dinner. Will happily sit in the freezer until required or in the fridge for 3 days.

Ingredients
- ½ a large avocado or 1 small avocado, mushed up
- ½ a mushed up ripe banana
- 60g wholemeal flour
- 1 egg
- 100ml of milk
Instructions
- Mix all ingredients until combined and spoon into muffin cases, usually an ice cream scoop gives the perfect amount.
- Bake at 180oc for 30 minutes or until cooked.
