Apple Crumble Cookies

We always need a little pick me up in the afternoon, these are great for that! packed full of slow energy releasing oats, they will keep you going all afternoon. We also eat these for breakfast. Why not try with custard for a treat or yogurt?

Ingredients
- 100g rolled oats
- 80g wholemeal flour
- 1.5 tsp cinnamon
- 1 tsp baking powder
- 2 tbsp melted coconut oil
- 1 egg
- 1 tsp vanilla extract
- 1 large finely chopped apple
Instructions
- Mix the oats, flour, baking powder and cinnamon.
- In a separate bowl whisk together the coconut oil, egg and vanilla then add to the dry ingredient.
- Fold the apple into the mixture until well combined.
- Spoon onto a lined baking tray and flatten out,
- cook at 180 for 12-15 mins until golden
- Place on a wire rack to cool

When are you meant to mix the wet and dry ingredients? Also, what do you fold the apple into? The wet mixture or after you’ve combined wet and dry?

Thank you for your question. I have just amended the recipe so I hope it is a little easier to follow now – sorry I think I must have been in a rush at the time.

Hi,
I made those cookies today and When adding the wet ingredients, it didn’t come out as a smooth dough. It was very crumbly. Is this normal?
Hi Sonja, it shouldn’t be crumbly it may be that your eggs were a little smaller in size. If it happens again you can always add a little bit of water to bring the mix together
