Wahoo it's Friday! It's the end of the week, so we're just using up veg from the back of the fridge and keeping things simple.... Oh and Mr PLW flies back tonight grin emoticon Penny tried pak choi tonight for the first time, which her Grandad grew in his fancy aquaponic greenhouse - I served it to her raw and she loved it, it could definitely be her new favourite! Ingredients
- 1 potato, peeled, chopped and boiled
- 2 carrots, chopped and boiled or steamed
- 1 low salt or no salt vegetable stock cube
- Handful of chopped coriander
Instructions
- Mash all ingredients together and sprinkle the stock cube into the mix.
- Shape into croquettes, put on a lined baking tray and cook at 200 degrees for 45 mins or until golden. Turn half way through.
