Mr PLW has just introduced me to another series on telly (Mad Men) it's been a slow burner, but intriguing all the same. So I guess that's my evenings sorted for the next few months! Served with sweet potato fries and a simple celeriac rĂ©moulade. This was a huge hit with all the family!

Ingredients
- 6 boneless and skinless chicken thighs
- 1 lime
- A few tbsp's desiccated coconut
- 1 tbsp curry powder
- A little coconut oil.
Instructions
- Zest and squeeze the lime over the chicken
- Add the curry powder then toss in the desiccated coconut.
- Place chicken on a wire rack and then put onto a baking tray, drizzle a little melted coconut oil over the chicken.
- Cook at 180 for 20-25 mins until thoroughly cooked through, cut one open to test.
