Cauliflower Cheese Balls

I made these earlier for Penny's lunch whilst she had her morning nap however, she has now gone for ANOTHER nap so we might have these for dinner instead as we have babies to see this afternoon, lunch will possibly be whilst on the move! If like me, you always have a little bit of unwanted cauliflower left at the back of your fridge, this is great! The balls are soft on the inside and firm and crisp on the outside making them easy for babies to pick up and munch.
Serves: 6
  • 6 steamed cauliflower florets (cooled)
  • A handful of grated cheddar
  • A handful of panko breadcrumbs
  1. Break up the florets using a fork to resemble breadcrumbs
  2. Add the cheese and the breadcrumbs and mix together.
  3. Form into ping-pong ball sized pieces and put onto a lined tray.
  4. Cook at 180 for 40 mins.
