Tomato Soup
A simple warming lunch inspired by todays gloomy cold weather.
  • 1 tin of chopped tomatoes
  • 1 carton of passata
  • 1 onion finely chopped
  • 1 clove of garlic finely chopped
  • a handful of fresh basil leaves
  • a splash of balsamic vinegar
  • Seasoning (optional)
  1. In a pan gently fry the onions until transparent and then add the garlic followed by the tomatoes and passata.
  2. Add the vinegar and seasoning and bring to a steady boil until slightly thickened.
  3. Pop in the basil leaves and then blitz (or chop the leaves and serve slightly chunky)
  4. - Adults you may need to add a little sugar to yours to bring out the sweetness in the tomatoes
  5. Also lovely with a splash of cream or a dollop of cream cheese.
