Cornbread Muffins

  • 25g melted butter
  • 70g polenta
  • 70g plain flour
  • 1 tsp baking powder
  • 140ml milk
  • 20g grated cheese
  • 1 egg
  • 2 tbsps sweetcorn
  1. In a bowl add the polenta, flour and baking powder, mix well.
  2. Break the egg into a jug and whisk together with the milk.
  3. Combine both the wet and dry mix and then add the butter, sweetcorn and cheese.
  4. Pour mixture into muffin cases and bake at 200c for 25-30 mins, insert a skewer and if it comes out clean they are done.
