Easy Falafel

Ingredients
  • A tin of chickpeas, drained
  • A bunch of parsley
  • A bunch of coriander
  • 1 clove of garlic
  • A squeeze of lemon
  • 2 tbsp's olive oil
  • Seasoning (optional)
Instructions
  1. Using a hand blender or food processor blitz all the ingredients.
  2. Form into small balls and then flatten slightly on a lined baking tray.
  3. Cook for 15 mins at 180°c
  4. Serve with flat bread, salad and hummus.
  5. Store in the fridge for a few days or freeze.
  6. Makes approx 8 falafels.
