Peanut Butter and Banana Muffins

Yesterday I discovered THE BEST peanut butter EVER. I've never really enjoyed peanut butter, I always found it quite sweet, sickly and sometimes gritty. Since gently introducing nuts into Penny's diet I wanted her to try it and rather excitingly there are so many recipes out there that call for a dollop of the golden stuff. We spent a while yesterday searching through the jar aisle reading labels and discarding those containing naughty palm oil and sugar, I love supporting new businesses and I love the concept of Pip and Nut (look them up, Pip the lady who founded the idea actually lived in a shed so she could fund her venture, love it!) this nut butter is amazing and delicious. It has the runny consistency of honey which makes measuring and mixing so much easier than some other leading brands.
Serves: 6
  • 125g self raising flour
  • 0.5 tsp baking powder
  • 15g oats
  • 1 ripe banana
  • 50g nut butter
  • 1 egg
  • 15g melted butter
  • 80ml milk
  1. Sift the flour into a large bowl and mix in the oats.
  2. In a separate bowl mash the banana and mix in the peanut butter, eggs, butter and milk.
  3. Stir into the flour mixture.
  4. Spoon into the muffin cases and bake for 15-20 minutes or until golden.
  5. Cool on a wire rack.
