We always need a little pick me up in the afternoon, these are great for that! packed full of slow energy releasing oats, they will keep you going all afternoon. We also eat these for breakfast. Why not try with custard for a treat or yogurt?
Serves: 8
  • 100g rolled oats
  • 80g wholemeal flour
  • 1.5 tsp cinnamon
  • 1 tsp baking powder
  • 2 tbsp melted coconut oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 large finely chopped apple
  1. Mix the oats, flour, baking powder and cinnamon.
  2. In a separate bowl whisk together the coconut oil, egg and vanilla then add to the dry ingredient.
  3. Fold the apple into the mixture until well combined.
  4. Spoon onto a lined baking tray and flatten out,
  5. cook at 180 for 12-15 mins until golden
  6. Place on a wire rack to cool
