Mexican Chicken Wrap
We're having lunch on the road today, between the local village swap shop and baby group. I've just whipped these up quickly to take along with us (cooked the chicken whilst having breakfast) they make an exciting alternative to the humble sandwich. Serving with bean salad (Penny's pincer heaven) and plum halves.
  • 1 boneless chicken thigh or half a breast - cooked
  • Half a spring onion
  • A cheek of red pepper
  • A tbsp on cream cheese
  • A small handful if grated cheese
  • A few coriander leaves
  • A tsp of taco seasoning
  • 1 large tortilla wrap
  1. Finely chop all the ingredients and shred the chicken, mix in the cheese and taco seasoning.
  2. Spread mixture evenly over the wrap
  3. Roll tightly and firmly
  4. Cling and refrigerate for 10 mins
  5. Slice into equal sized pieces
  6. This will make enough for both of you 😊
