Banana and Avocado Muffins

Yummy muffins using two of Penny's current favourite foods; banana and avocado. Great for on the move, breakfast, lunch or dinner. Will happily sit in the freezer until required or in the fridge for 3 days.
Serves: 6
  • ½ a large avocado or 1 small avocado, mushed up
  • ½ a mushed up ripe banana
  • 60g wholemeal flour
  • 1 egg
  • 100ml of milk
  1. Mix all ingredients until combined and spoon into muffin cases, usually an ice cream scoop gives the perfect amount.
  2. Bake at 180oc for 30 minutes or until cooked.
