Avocado Pesto

Not wanting to disturb Penny's nap, but wanting to get on with tonights dinner prep I concocted a no fuss sauce without having to use the noisy blender. It's quite thick, so it would be great as a dip, but I'll be diluting it with a little water later to serve as a pasta sauce. Best eaten the same day
Serves: 4
  • 1 ripe avocado
  • Juice of 1 lemon
  • A handful of finely chopped fresh basil
  • 1 finely chopped clove of garlic
  • A pinch of black pepper, a pinch of salt
  • 1 tbsp ground almonds
  • 2 tbsp's olive oil
  • As much water as you need to reach desired consistency
  1. Mush up the avocado and then mix the rest of your ingredients in.
  2. Add as much water as you like for a sauce leave out if you're using it as a dip or spread.
