Butternut Squash and Chickpea Burgers

Serves: 8
  • ½ a diced, then roasted butternut squash (40 mins at 180)
  • 1 tbsp garam masala
  • 1 tbsp ground cumin
  • 1 finely chopped garlic clove
  • a handful of fresh coriander, chopped,
  • 1 tin of chickpeas
  • a handful of garden peas
  • 50g fine breadcrumbs
  • 1 egg
  1. in a bowl combine the squash, chickpeas and peas - mash slightly with a potato masher or the back of a spoon
  2. add the herbs and garlic
  3. mix in half your breadcrumbs ( you may need more if the mixture is quite wet)
  4. pop in the fridge to firm for an hour
  5. shape into patties
  6. dip the burgers in beaten egg then sprinkle with breadcrumbs
  7. put onto a baking tray and cook for 35-40 minutes at 180 until golden.
  8. Alternatively, shallow fry until golden in both sides.
