Love a good fishy Friday! As does Penny, fish is up there with all her other favourite foods. Enough for 2 adults and a babe We're serving simply with garlic butter new potato slices and minted garden peas.
Serves: 3
  • 250g white fish
  • 1 egg
  • A handful of plain flour
  • A handful of panko breadcrumbs
  • Finely chopped parsley
  • ½ a lemon
  1. Slice the fish into finger sized portions
  2. Coat in flour and shake off the excess
  3. Dip in egg
  4. Mix seasoning and parsley into the breadcrumbs
  5. Cover the fish in breadcrumbs
  6. Pop onto a baking tray
  7. Cook at 180°c for 20-25 mins depending on the size of your fish.
  8. Serve with a squeeze of lemon.
