We really love Mexican food in this house, it's not only tasty but also very quick and simple to prepare. I also enjoy all the little side dishes that can accompany a wrapped up piece of yum! Here's one of our favourites. Served with lightly toasted tortilla wrap, grilled chicken with a squeeze of lime and a mixed bean salad
Serves: 4
  • 1 ripe avocado, diced and slightly mashed
  • ⅓ small onion finely diced
  • ½ a clove of garlic finely diced
  • 1 tomato finely diced
  • ½ a juiced lime
  • Some chopped fresh coriander
  1. Pop all ingredients together
  2. stir until combined
  3. Season for older children and adults
