There's not a lot you can do with a pot of cottage cheese right? I had some in the fridge and I usually have it on a jacket potato, but I was feeling a little inventive today. I made muffins with it instead and due to the low gluten content they are so deliciously light and yummy! 👌 Great for packed lunches and on the move! And in other news, I'm in the process of popping all recipes onto our new shiny website (with a printable recipe card for each) and I'm hoping to go live on Sunday!! 😊🤓💻
Serves: 4
  • 150g cottage cheese
  • 60g self raising flour
  • ½ tsp baking powder
  • 20g grated cheese
  • 2 tbsp sweetcorn
  • 1 egg
  • A few finely chopped chives
  1. Mix all the ingredients together.
  2. Bake at 180°c for 30-35 mins. Makes 4 large muffins.
  3. Cool in tray for a few mins before removing.
  4. Served with avocado and cucumber fingers.
