Pea and Mint Dip

Just preparing a quick lunch for us, we've got our veggies and toast so we're going to dip, dip, dip!!
  • 1 can of drained butter beans
  • Juice of 1 lemon
  • 2 handfuls of garden peas
  • 2 tbsps oil
  • 1 clove of garlic
  • A small bunch of fresh mint
  • A good pinch or 2 of cracked black pepper.
  1. Blitz everything together and add water until you reach a nice smooth consistency.
  2. Things to dip: pepper, cucumber, bread sticks, apple sticks, cheese, steamed baby corn, steamed asparagus.
