Carrot and Cheese Biscuits

We've re-stocked the snack tin with this sunshine in a biscuit creation, a different take on our savoury flapjack recipe... I sampled one at lunch with my carrot soup and Penny had hers as a snack after baby group, we both loved them.
  • 1 finely grated carrot (around 100g)
  • 1 egg
  • 30g finely grated cheese
  • 2 tbsp oatmeal
  • Poppy seeds
  • Add a little water if the mix is too dry.
  1. Pop dollops onto a lined tin and flatten with the back of a spoon, or cut them out with a cookie cutter.
  2. Sprinkle with Poppy seeds.
  3. Bake at 180°c for 10-15 mins depending on the thickness of your biscuit, they should be golden and crisp around the edges.
