For lunch today we both enjoyed a quick and easy to make chana masala, another last minute change of plan as we were going to have homemade baked beans. Penny had little flower shaped smoked cheese on toast with hers.
Serves: 4
  • 1 onion
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp cumin
  • 1 garlic clove
  • 1 tin of chickpeas
  • 200g passata
  • fresh coriander to serve
  1. Lightly fry 1 diced onion, 2 tsp curry powder, 1tsp garam masala, 1tsp cumin, 1 finely chopped clove of garlic. Add a little water to make a thick sauce.
  2. Mix in a tin of chickpeas and 200g passata or chopped tomatoes, cook for around 20 mins on a medium heat.
  3. Add a little freshly chopped coriander and a splash if cream, stir then serve.
