Here's last night's meal, sorry it's late, let's just pretend it's lunch <img draggable="false" data-mce-resize="false" data-mce-placeholder="1" data-wp-emoji="1" class="emoji" alt="đŸ˜…" src="">... Mr PLW has just introduced me to another series on telly (Mad Men) it's been a slow burner, but intriguing all the same. So I guess that's my evenings sorted for the next few months! Served with sweet potato fries and a simple celeriac rĂ©moulade. This was a huge hit with all the family!
Serves: 4
  • 6 boneless and skinless chicken thighs
  • 1 lime
  • A few tbsp's desiccated coconut
  • 1 tbsp curry powder
  • A little coconut oil.
  1. Zest and squeeze the lime over the chicken
  2. Add the curry powder then toss in the desiccated coconut.
  3. Place chicken on a wire rack and then put onto a baking tray, drizzle a little melted coconut oil over the chicken.
  4. Cook at 180 for 20-25 mins until thoroughly cooked through, cut one open to test.
