Celeriac and Potato Pancakes

Last night I made extra (celeriac, potato and apple) mash to go with our pork and fennel casserole. So that today we could make potato cakes for lunch with the leftovers. The mash itself is great if you're on the transition between purées and solids.
Serves: 6
  • 100g of boiled potato, celeriac and apple combined (about the amount of an average sized potato) then mashed
  • 1 egg
  • 1 tbsp plain flour
  • ½ tsp baking powder
  • ½ tsp wholegrain mustard
  • A pinch of pepper and a little roughly chopped parsley.
  1. Mix all ingredients together.
  2. Heat a pan with a little butter and a drizzle of oil.
  3. Fry the cakes in small dollops and cook for a few minutes on each side.
  4. (Makes around 6)
  5. We served with cream cheese and cucumber spirals.
