Morning, it's snowing here ❄ albeit it's also raining at the same time 😑💧 so we're staying cosy inside. Anyone else have snow?? Here's another simple lunch idea that can be made ahead and frozen, these are so light and more-ish they probably won't make it to the freezer. The recipe makes 6 but you might want to double it! Today we'll be eating these our favourite way, freshly baked and warm.

Ingredients
40g melted and cooled unsalted butter
1 low salt chicken stock cube (broken up)
Around 50g cooked chicken
Half the sweetcorn from the cob or a few tbsp tinned or frozen sweetcorn
125g plain flour
1egg
140g natural yogurt
1tsp baking powder
½tsp bicarbonate of soda
Smoked paprika for garnish
Instructions
Combine all ingredients until thoroughly mixed and smooth.
Then put into muffin cases or like us, straight onto a silicone muffin tray and bake for 20-25 mins at 200 until toothpick comes out clean.
