Blueberry and Vanilla Pancakes

We now have full bellies and ready to start the day! Very much looking forward to seeing Rhubarb Theatre Companies production of The Snail and the Whale at our village baby group later this morning. Snacks at the ready! Blueberries can hold their heat so just make sure they are cool inside before giving to baby. We served with a little natural yogurt and a slice of orange.

Ingredients
- 100g plain flour
- 80g ricotta cheese
- 2 eggs
- Handful of blueberries
- A generous splash of milk
- A drop of vanilla extract
- A pinch of baking powder
Instructions
- Mix all ingredients together except the blueberries, until the mix is smooth and lump free
- Add the blueberries and mix in.
- In a non stick pan add a nob of unsalted butter and a little oil
- Heat on medium and add tablespoon sized dollops of the mix.
- Cook for a few minutes on each side, until they turn golden and start to bubble slightly.
- Cool on kitchen roll.
